Southern Cornbread Dressing

Ingredients

· 2 batches Southern Cornbread

· 2 cups bread crumbs

· 2 diced ribs celery

· 1 diced green bell pepper

· 1 diced red bell pepper

· 1 diced yellow onion

· 4 tablespoons butter

· 1 pound shredded cooked chicken

· 3 chopped sage leaves

· 1 teaspoon chopped fresh thyme

· 1 teaspoon chopped fresh rosemary

· 2 teaspoons minced garlic

· 2 teaspoons salt

· 2 teaspoons black pepper

· 4 ½ cups chicken broth

· 1 large egg, whisked


Instructions

1. Make corn bread the day in advance to allow it to dry out.

2. Preheat oven to 350℉.

3. Crumble the cornbread into a large bowl and mix in the bread crumbs. Pour In the chicken broth and set to the side.

4. In a medium size pan melt the butter over medium heat.

5. Once the butter is melted ass in the onions, celery, and bell peppers. Sauce until just softened. Then add in the garlic, rosemary, thyme, salt, and pepper. Mix well and add to the bread mixture.

6. Add the chicken and the egg to the vegetable mixture and combine.

7. Add the stuffing to a greased 9 x 13 baking dish and cover with aluminum foil.

8. Let back for an hour. Then remove the foil and bake for an additional 30 minutes.

9. Let cool and Serve.
