Cranberry Jello Delight

As a child I couldn’t wait for Thanksgiving for this refreshing dessert my mother use to make. She use to present it in her fancy punch bowl with the cute glasses that would hang from the sides. All the children in the neighborhood would flock to my house and we would sit on the porch in our fancy Thanksgiving Day clothes and pretend to be famous while eating Cranberry Jello Delight.

Ingredients:


2 cup finely chopped fresh cranberries

2 cup frozen strawberries cut in halves

1 ½ cup crushed walnuts

1 large package cherry jello

½ cup whipping cream

2 ½ cups granulated sugar

2 cup red seedless grapes cut in halves



Instructions:

1. Place cranberries and granulated sugar in a bowl cover and set in the fridge for 24 hours stirring every 8 hours or so. (Don’t wake up in the middle of the night to stir)

2. Make Jello (1c. hot water & 1 cup cold water), wait for jello to gel, not to firm 2-3 hours max

3. Add cranberry mixture to jello and mix

4. Add grapes, strawberries, and nuts and mix

5. Take whipping cream and beat until it becomes like a foam

6. Add to mixture and refrigerate 3-4 hours, Enjoy
