Ingredients:
1 can refrigerated biscuit dough
1 cup shredded mozzarella
½ cup mini pepperonis
3 tablespoons melted unsalted butter
¼ cup extra-virgin olive oil
1 clove minced garlic
2 tablespoons chipped parsley, garnish
1/2 cup grated parmesan cheese
½ teaspoon black pepper
1 cup marinara, warmed
Directions:
Preheat oven to 400℉. Grease a cake pan and set aside.
In a small bowl add the butter, olive oil, garlic, parsley, parmesan, and pepper, mix to combine and set aside.
Use a cup to roll out the biscuits and flatten them. Then cut the biscuit in half. Brush the butter mixture on the top half of the biscuit piece. Then place a tablespoon amount of mozzarella and two or three small pepperonis on the top of the buttered side of the biscuit. Roll the dough lengthwise enclosing the cheese and pepperoni. Pinch the edges to seal and tie the dough into a lose knot. Continue with the remaining biscuits.
Place the pizza knots on a parchment lined cookie sheet. Brush the remaining butter mixture on the top of the knots.
Bake in the oven 15 – 18 minutes or until the cheese is melted and the biscuits cooked completely Serve with the warm marinara.
