Breakfast Casserole

Undetermined. General belief is in New York City in the 1930s. Henry Low included an egg roll recipe in his 1938 book Cook at Home in Chinese.

1 pound sage flavored breakfast sausage

1 pound diced bacon

3 cups small diced potatoes

¼ cup butter, melted

12 ounces mild cheddar cheese, shredded

½ cup onion, diced

¼ cup green peppers, diced

¼ cup red peppers, diced

10 jumbo eggs

¼ cup of heavy whipping cream

1 tsp. salt

1 tsp. pepper

1 tsp. granulated onion powder


1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease with butter a 9x13 inch square baking dish

2. Place sausage and bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside

3. In a skillet sauté the potatoes in butter until tender all the way through

4. In the prepared baking dish, stir together the diced potatoes and butter. Line the bottom and sides of the baking dish with the mixture. In a bowl, mix the sausage, cheddar cheese, onion, green pepper, red pepper, heavy whipping cream, salt, pepper, granulated onion powder and eggs. Pour over the potato mixture

5. Bake 45 min in the preheated oven, or until a toothpick inserted into center of the casserole comes out clean. Let cool for 5 minutes before serving
